Okra or well known as lady finger is a vegetable that I just “met” recently (well, I’m sure they had been “sitting still” in the market all this time, but I never paid attention). One day, my mom brought this cooked vegetable from the food court near where we live, and I felt in love immediately. I’m a big fan of vegetables…..almost any kinds, so I always love to taste new ones.
I love the texture, the taste, and of course the spiciness in it. But sometimes it’s hard to get fresh cooked okra from the food court, and besides the sambal usually doesn’t taste like what I want. Indonesian sambal that I like so much is very spicy, but Singapore sambal tends to be sweet and sour. So I tried this at home by using my mom’s homemade sambal terasi….and it was delicious. Best to east wit my favorite “ikan asin” (dried salty fish) and “kerupuk bawang”.
- Okra / lady finger (about 20), cut the head and tail, then cut diagonally
- 3 cloves of garlic, minced
- 2 shallot, minced
- 1/2 tomato, minced
- 1 tbsp sambal terasi
- 1/2 tsp sugar
- 1/2 tsp pepper
- Salt, to taste
- 1 tsp cooking oil
- Heat the wok and add the cooking oil
- Stir fry garlic and onion until fragrant
- Add chili and tomatoes, stir fry
- Add okra, sugar, salt, and pepper, stir fry for a few minutes until cooked
